Peanut butter and pickle on a bun

I'm reading my way through Sue Grafton's alphabet mystery series again.  After about the third reference to Kinsey enjoying peanut butter with pickle sandwiches I decided to try it.  Well, wow.  This was the first one – a ciabatta bun, cut in half, toasted, spread with peanut butter and then a layer of sweet pickles.  IMG_1529

From then on I have made them open-faced  but doubled the amount of peanut butter.  And experimented with bread'n'butter pickles.  Next I plan to try dill pickles, sliced.  

The peanut butter is homemade in one of those small electric food grinders using a cup of blanched and roasted unsalted peanuts with some olive oil added before processing.   

It's an interesting and tasty combination of flavours and textures.
