VEGGIE COMBO

This may not be what the nutritionists who came up with the Canada Food Guide intended with their advice to eat so many helpings of fruit and vegetables each day but having a bag of mixed vegetables in the freezer and cooking up the suggested daily quantity all at once works for me.  Particularly with the following sauce: while the veggies are cooking, in a mixing bowl put a dollop of mayonnaise, enough to nicely coat the amount of vegetables being cooked.  Then add about equal amounts of the following spices – cumin, coriander and garam masala; about half a teaspoon each for every cup of vegetables.  Stir well into the mayo.  Drain the vegetables and dump into the mayo mixture.  Stir to coat.  I particularly like a broccoli/cauliflower/carrot mixture.
